Which sauce with which steak
Truffle, bourbon, BBQ or garlic: a pairing guide built around the sauces on our board.

A sauce should do one of two jobs. Either it adds what the meat lacks, or it cuts through what the meat has too much of. A lean cut wants richness; a fat cut wants something sharp, smoky or aromatic to keep every bite from tasting the same. There are six sauces on our board. Here is what each one does and where it belongs.
Truffle
Earthy, deep and a little sweet, with a texture that coats. Truffle is the richest sauce on the board, so it belongs with the leanest meat: filet mignon first, striploin second. On rib eye it doubles up on richness, which some people love, but it hides the aged flavour you paid for. It is also the sauce to get for grilled potatoes and wedges if you want to turn a side into the main event.
Bourbon
Sweet, smoky and a touch boozy, with the caramel notes of the barrel. It is an adults-only sauce, marked 18+ on the board. Sugar and smoke love fat: bourbon is the pairing for rib eye and for picanha's crisp cap, where it glazes the rendered edge. It also does good work with the pork chop and the pork medallions. Keep it away from filet, which it overwhelms.
BBQ
Tomato, vinegar, sugar and smoke. Sharper and thinner than bourbon, it cuts through fat rather than glazing it. Picanha is its natural partner, and it is the obvious sauce for the grilled chicken fillet and the pork plates. On a dry-aged steak it is a strong voice; use it as a dip on the side, not poured over, so the meat still speaks first.
Garlic
Creamy and aromatic, sharp from raw garlic rather than from acid. This is the sauce for striploin: it adds the fat the cut lacks and the aroma sits well next to a clean beef flavour. It is also the classic with the chicken fillet, with fries and wedges, and, if you are the type, on the crust of a pizza.
Mayonnaise and ketchup
The two honest sauces. Mayonnaise for fries and wedges, ketchup for the same and for a pork chop if that is how you grew up eating it. Neither belongs on a dry-aged steak, and we will not pretend otherwise. If you want something simple with a steak, salt and the sauce that comes with it are enough.

How to order it
Sauces are a separate line on the online menu, so add them to the basket next to the dish. Prices are per portion. The filet mignon already comes in red wine sauce with a pepper sauce alongside, so it does not need one; the three dry-aged steaks arrive with the sauce you choose. If you are ordering for a table, one rich and one sharp sauce covers most plates.

Bourbon
Salda, dūmaina un ar alkohola pieskārienu, ar mucas karameļu notīm. Tā ir mērce tikai pieaugušajiem, ēdienkartē atzīmēta ar 18+. Cukurs un dūmi mīl taukus: bourbon ir pāris rib eye un picanha kraukšķīgajai cepurei, kur tā glazē izkusušo malu. Tā labi strādā arī ar karbonādi un cūkgaļas medaljoniem. BBQ
Tomāti, etiķis, cukurs un dūmi. Asāka un šķidrāka nekā bourbon, tā taukus pārgriež, nevis glazē. Picanha ir tās dabiskais partneris, un tā ir acīmredzamā mērce grilētai vistas filejai un cūkgaļas ēdieniem. Uz nogatavināta steika tā ir skaļa balss; lieto to kā mērcīti blakus, nevis lej pāri, lai gaļa runā pirmā.
Ķiploku
Krēmīga un aromātiska, asa no svaiga ķiploka, nevis no skābes. Šī ir mērce striploin: tā pievieno taukus, kuru gabalam trūkst, un aromāts labi sader ar tīru liellopa garšu. Tā ir arī klasika ar vistas fileju, ar frī un daiviņām un, ja esi no tiem, uz picas maliņas.
Majonēze un kečups
Divas godīgās mērces. Majonēze frī un daiviņām, kečups tam pašam un karbonādei, ja tā tu esi audzis ēst. Neviena no tām nepieder uz nogatavināta steika, un mēs neizliksimies citādi. Ja pie steika gribi ko vienkāršu, pietiek ar sāli un mērci, kas nāk līdzi.
