Three of our steaks spend forty-five days in the ageing chamber before they see the grill. Here is what happens in there, and what it does to the beef.

  1. Day 0

    Into the chamber

    Selected cuts of rib eye, picanha and striploin go into the ageing chamber: cold, dry, with constant airflow.

  2. Day 7

    A crust forms

    The surface dries and firms into a dark crust that protects the meat beneath it.

  3. Day 14

    Enzymes get to work

    Natural enzymes start breaking down connective tissue. The muscle relaxes and the texture softens.

  4. Day 30

    Flavour concentrates

    Moisture has left the meat, so the beef flavour deepens: nutty, rich, almost sweet.

  5. Day 45

    Trimmed and onto the grill

    The crust is trimmed away, the steak is portioned, seasoned and seared over real heat.

Heavy marbling that melts into the meat as it cooks. The richest and juiciest of the three.

Hard sear for a deep crust, then a proper rest. Best medium-rare to medium, so the fat renders.

The Brazilian rump cap with its fat crown: lean underneath, crisp and golden on top.
On the grill
Fat side to the heat first so the cap crisps. Best medium-rare, sliced against the grain.

Filet mignon. Not aged, on purpose.

Filet is prized for tenderness, not marbling, so it goes to the grill fresh rather than through the chamber. It is served in red wine sauce with fondant potatoes, mushrooms and pepper sauce.
